CRANBERRY CHOCOLATE CHIP COOKIES

Ingredients

1/2 cup granulated sugar

1/2 cup brown sugar

1/2 cup canola oil

1 egg

1 tsp. vanilla

1 cup unbleached flour

1 cup oatmeal

1/4 cup ground flaxseed

1/4 tsp. salt

1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 cup dried cranberries

1/2 cup dark chocolate chips

Directions

Preheat oven to 350 F.

In a medium bowl, combine the granulated and brown sugars.

Add the oil and beat together until smooth. Beat in the egg and vanilla.

In another bowl, combine flour, oats, ground flaxseed, salt, baking powder, and baking soda.

Add to the sugar mixture.

Finally, stir in the cranberries and dark chocolate chips.

Drop by the tablespoon onto an ungreased baking sheet.

Bake for 10 minutes.

Yield: 36 cookies
