Elsa Dimick

of Emmaus

Elsa (Schimberg) Dimick, 94, of Emmaus, died July 14, 2026, in her home, surrounded by her loving family. She was the wife of the late Dr. Dean F. Dimick. Born in Chicago, Ill., she was the daughter of the late Arnold and Judith (Aaron) Schimberg.

She turned an 18th century federal-style mansion into Longswamp Bed & Breakfast where she hosted guests from around the world.

She was passionate about cooking gourmet meals and entertaining, which led to a long career in catering.

She grew beautiful gardens and surrounded herself with books and music.

She is survived by her children, Joshua (Kimberly), of Utica, N.Y., Timothy (Vivian), of Sebastopol, Calif.; Brigham (Erin), of Edwardsville, Ill., Rachel Allen (Patrick), of Allentown; sister, Deedee Gartman, of Los Angeles, Calif.; brother, Jacob Schimberg and his wife, Hollie, of Eastsound, Wash.; grandchildren, Gabriel, Nathaniel, Grayson, Celia, Howl, Gaylen, Tyler, Jordan; great-grandchildren, Hannah, Sarah, Della; loving cousins, nieces and nephews. In addition to her husband, she was predeceased by son, Dr. Tony; brother, Henry Schimberg; and brother-in-law, Gerald Gartman.

Memorial contributions may be made to Treatment Trends, a nonprofit treatment center active for more than 50 years in Allentown.

A celebration of her life will be held 3:30 p.m. July 30 in the Heintzelman-Stephens Funeral Home, P.C., 274 N. Krocks Road, Allentown. Family and friends may pay their respects 2-3 p.m. in the funeral home. Online expressions of sympathy may be recorded at www.heintzelmanstephens.com.
