Think outside the lunch box

Adding dairy to the diet of school-aged children will help them fuel up to learn.

Dairy foods are a great source of calcium, which can help to build strong bones.

Serving low-fat choices will help protect children's bones and hearts. Packing dairy in the lunch box is a great way to ensure a child is getting three servings of dairy everyday but sometimes packing a snack with dairy is helpful, too.

Whether as an after-school snack, or a school day break, Go-Gurts are enjoyable frozen. Freeze a favorite flavor and send the tube off to school with the youngsters.

Another snack time dairy product is cheese sticks. These are two options to send to school for a snack or keep at home for a treat when they get off the bus.

Here is a recipe to jump start their day with a quick grab-and-go mini egg muffin filled with nine essential nutrients to keep them focused at school.

Mini Egg Muffin

4 eggs

1/4 cup milk

1/2 tsp. salt

1/2 tsp. pepper

4 slices of ham, diced

4 scallions, diced

1/4 cup shredded cheddar cheese

Directions

Spray the wells of six muffin holes in the muffin pan with cooking spray.

Preheat oven to 350 degrees. Whisk together egg, milk, salt and pepper.

Pour egg mixture evenly into muffin holes. Add toppings.

Bake for 20-25 minutes or until eggs are slightly browned.
